The seed was planted for the company in 2020, when Polly decided to create a brand of Gin and Vodka that was as trustworthy as she is. She was stuck in her cage due to the lockdowns of 2020, but by the second half of 2021, The Honest Polly Liquor Company was ready to fly, proving that there is spirit within the bubble. Crossing the floor to gain bipartisan support, Polly heads up a team of individuals passionate about spirit at every step of the process.

What Polly wants; Polly gets. And she wants clean and simple spirits with a bit of character. Life wasn’t meant to be easy, but our goal is to love, laugh and play in the sand or snow, or wherever we may go. Whether she wants to perch at home and relax or get out of the birdhouse after a long day for drinks on the fly, these affordable locally made spirits will do the trick.

Polly may not hold the hose, but she does know how to use a Polish made continuous reflux still, producing pure and clean Vodka and adding her favourite botanicals for a classic Gin. Polly gets in a flap about locally made products, she sources grain with her keen nose and distils the products in the Riverina. The pair of spirits; a London-dry Gin with heavy juniper aromas, finished with cardamom and native botanicals and a crisp and clean Vodka are an absolute cracker – exactly what Polly was looking for.
